CRASVIDMIL Cooperative – Lago de Yojoa, Honduras
Founded in 1998, CRASVIDMIL is a 52-farmer cooperative based around Honduras’ largest lake, Lago de Yojoa. Originally grain growers, the group made a strategic shift in 2011 to cocoa for greater long-term stability and sustainability.
Working within a lush lake-side microclimate, the cooperative manages its entire post-harvest process with strict protocols: careful bean selection, centralised wooden-box fermentation for about five days, and seven days of controlled sun-drying on mesh beds. This tight workflow ensures consistency across a small, committed producer group.
Lago de Yojoa cacao delivers a robust cocoa profile with balanced bitterness, acidity, and astringency, layered with clear notes of nuts and dried fruits.
