The base of this bar is our house-made Uganda 72%—a clean, focused formula of cacao beans, cacao butter, and sugar. It opens with the sweetness of ripe banana bread, followed by a bright hint of orange acidity, and finishes with a gentle cinnamon warmth.

This time, we paired it with a wild spice from the mountains of Taiwan: Makauy. Often called the “black pearl of the forest,” this mountain pepper holds deep cultural roots. In Atayal tradition, Makauy means vitality—endless, ever-growing life. It’s used in everyday cooking, and even brewed as a calming drink during arguments or headaches. A quiet wisdom passed down from their ancestors.

Makauy’s aroma is vivid: lemony freshness, ginger-like warmth, subtle lemongrass, and a delicate peppery lift. Blended into the depth of Ugandan cacao, it shines through like sunlight filtering into a dense forest—adding lightness to richness.

This bar is made for moments when you want to slow down. Pair it with hot cacao tea or black coffee, and let the aromas unfold—steady, grounding, and quietly empowering, like taking a deep breath in the woods.
